1 c. flour, 1/3 c milk, 1 1/2 tsp baking powder, 1/4 tsp salt, 1 tbsp granulated sugar, 2 tbsp shortening, oil for frying, 1/4 c powdered sugar, 1/2 tsp cinnamon

In a large bowl, stir together flour, baking powder, salt, and sugar. With pastry blender, cut shortening into flour mixture, until coarse crumbs form. Add milk and mix with a fork until mixture forms a ball and leaves the side of the bowl. Put dough on a lightly-floured cutting board and knead until smooth (about 3 mins). On lightly-floured cutting board, roll dough into a 10"x12" rectangle with floured rolling pin. Cut rectangle into 30 2"x2" squares. Put a couple squares into hot fat (375º) and turn over immediately so squares will puff up evenly. Brown on both sides. Drain on paper towel. Combine powdered sugar and cinnamon. Sprinkle topping on drained puffs.
