Pie crust: 1 stick softened butter, 1 c. flour, 2 tbsp sugar, dash of salt. Filling: 2 c. boiling water, 1 1/2 c. cold water, 2 1/4 c. sugar, 3/4 c. cornstarch, 1/3 tsp salt, 1 3 oz. pkg. orange pineapple jell-o, 1/4 c. lemon juice, 6 sliced peaches

Crust: Mix butter, flour, sugar and salt together and spread into bottom of 9 " pie pan. Bake at 350º for 20-25 min.

Bring water to boil. Make paste of 1/2 cups cold water, sugar, cornstarch, and salt. pour into pan of boiling water and mix well. cook over medium heat until very think (about 3 minutes). Add jell-o and cook one more minute. Remove from heat and add lemon juice. Chill. Makes filling for three pies. Mix peaches with 1/3 of filling mixture and pour into cooked crust. Cover with whipped cream.
