4 c. potatoes, 1/4 lb grated cheddar cheese, 1 1/2 tbsp flour, 1 1/2 tbsp butter, 11/2 c. milk, 1 tsp. salt, 1/2 tsp pepper, 1 c. bread crumbs with 1-2 tbsp butter

Scrub and boil potatoes in salted water. Peel and cut into chunks.

White sauce: Melt butter. Add flour, milk, salt, and pepper. Stir until sauce thickens. Add grated cheese. Pour over potatoes and toss to cover them with sauce. Spread into casserole dish.

Combine bread crumbs and butter. Brown gradually over low heat while stirring constantly. Sprinkle over potatoes.

Bake uncovered for 30 min. at 350º.
