One Pie Shell
1 tbsp butter
2 small onions, chopped
1 cup swiss cheese
4 eggs at room temperature
2 cups heavy cream
1/2 tsp salt
1/2 tsp cayenne pepper
1/2 tsp pepper
*sauted mushrooms
*1+ cups sauted fresh spinach
* 1 plum tomato sliced

Directions:
Directions:
Melt butter and saute onions. Place onion and cheese in pie shell. Beat eggs, cream and seasonings. Lay *optional vegetables on top and pour egg mixture on top. Bake on lower shelf in oven at 450 degrees for 15 minutes. Reduce head to 350 degrees and bake for 50 minutes until custard is done. Insert knife, and if it comes out clean, pie is done. May be served hot, cold or at room temperature.
