2 slightly beaten eggs
1 (8 1/2 oz.) Jiffy corn muffin mix
1 (15 oz.) can cream-style corn
1 (8 or 15 oz.) can whole kernel corn, drained
1/2 c (1 stick) butter
1/2 c. sour cream
green pepper, chopped (optional)
cheddar cheese, grated

Combine all but cheddar and bake 25 minutes at 350º in 8x10" greased pan. Sprinkle cheddar on top and cook 10 more minutes, or until knife comes out clean.
