Potato Soup Recipe

6 potatoes, peeled and diced
1 onion, minced
2 T. butter
1 T. oil
2 carrots, peeled and diced
2 large stalks celery, diced
1 1/2 c. ham, diced
3 T. flour
1 1/2 tsp. salt
1/2 tsp. black or white pepper
2 c. whole milk
1 c. heavy cream

Saute onions in butter and oil until soft or translucent. Add potatoes and carrots, stir to coat with butter/oil. Cook slowly 15 to 20 minutes. Stir to prevent sticking. Add celery. Cover and cook 10 minutes. Don't allow to brown. Add ham and cook covered about 10 minutes longer, until veggies are almost done. Place these items, just cooked, plus last 5 items in crock pot. Slow cook 1 hour or until thick and veggies soft.
