1 can Lite Spam, cubed and browned
1 tsp. vegetable oil
1 16-oz. pkg. frozen broccoli spears
1 1/2 c. milk
3 eggs
1 tsp. each salt and pepper
3/4 c. biscuit mix
1/2 c. onions, chopped
1/2 c. bell pepper, chopped
1 c. cheddar cheese, shredded

Directions:
Cube Spam, brown in oil, drain on paper towels. Cook broccoli as directed on package, drain. Mix milk, eggs, salt, pepper and biscuit mix with a hand mixer until smooth. Grease (or spray) a 13" x 9" baking dish. Spreads onions, bell pepper and cheese on bottom of dish, then cover evenly with Spam. Arrange broccoli spears over Spam layer, then pour egg and milk mixture on top. Bake in preheated 400 oven until golden brown, about 40-45 minutes. Let stand for 10 minutes before serving.
