Gilroy Chili

1 lb. ground beef
1 cup diced onion
4 cloves garlic, minced
28 oz. can diced tomatoes
28 oz. light red kidney beans
4 oz. can diced green chilies
1 can tomato paste
2 cups water
2 tsp. beef stock base
1 T. chili powder
1 T. ground cumin
1 tsp. salt
¼ tsp. black pepper
Flour or cornstarch for thickening

Brown beef in Extra Virgin Olive Oil with onions and garlic. Combine all other ingredients in a stewpot except beans. Simmer 30-45 min. then add beans and thicken with a little flour as needed.
