4 3/4" pork chops
1 1/2 bunches green onions
1 1/2 cups sour cream
salt
pepper
paprika
1 tbsp. oil or butter

Directions:
Directions:
Preheat oven at 325º. Sprinkle each chop with the salt, pepper, and paprika on both sides, and place in a hot skillet with oil, to brown. I use a cast iron skillet that can go directly into the oven later. While the chops are browning, wash and clean the green onions. Remove a small portion of the green tops, and lay the remaining pieces over the browned chops. Cover the onions with the sour cream and lightly sprinkle the top with paprika. Cover and place in preheated oven to bake at 325 degrees for 40 minutes. The dish is tasty with rice as a side, with a small amount of the juices ladled on top.

When Jackson's father was a young boy, we lived in the country and raised a good portion of our food. Our own farm raised hog (always called George) and our own onions would go into this dish. Very tasty!
