2 cups milk
1/4 cup quick cooking tapioca
1/4 cup sugar
1/4 tsp. salt
2 egg yolks

2 egg whites
2 tsp. sugar
1 tsp. vanilla

Directions:
Directions:
Mix first 5 ingredients together in glass bowl or large pitcher, using wire whisk. Let stand 10 minutes to soak tapioca. Then microwave for 5-6 minutes on a medium high speed until it starts to bubble. Stir Continue to microwave for 3-4 minutes more. Cool.
Beat egg whites until foamy. Add sugar gradually. Continue beating until soft peaks form. Add vanilla. Fold into cooled tapioca.
