1 (3 1/2 lb) chicken pieces skinned
2 cups buttermilk
1/2 (16 oz) package herb seasoned stuffing mix (4 cups)
2 Tablespoons grated Parmesan cheese
1/8 teaspoon ground red pepper
salt & pepper
1 stick butter melted

Directions:
Directions:
1. Soak chicken in buttermilk for 8 hrs, drain and discard buttermilk

2. Pre-heat oven 350 process stuffing, cheese, pepper, and salt and pepper in a blender until fine crumbs.

3. Dip chicken pieces in butter, and roll in stuffing mixture until well coated

4. Place chicken on baking sheet and bake 350 for 1 hour and 10 minutes or until golden brown
