2 ¼ c. sifted plain flour
3 teaspoons baking powder
1 tsp. salt
1 1/3 c. sugar
½ c. shortening
1 c. plus 2 tbsp.milk
1 tsp. vanilla or coconut flavoring
1 whole egg & 3 egg yolks— divide 3 eggs
and set aside the 3 egg whites for 7 minute icing

Mix flour, baking powder & salt and sift together
Beat shortening then add sugar and beat until creamy.
Add whole egg to flour and sugar mixture and beat for 1 min. Add egg yolks and beat another min.

Add flour mixture, alternating flour and milk, starting and ending with flour mixture, beat after every addition Add flavoring last and mix again.
Pour into 2 round pans, greased & floured. Cook at 350º until toothpick stuck in the middle comes out clean, about 25-30 min.

Sugar, Water Mixture for Cake Layers

While cake is cooking: mix 1 ¾ cups sugar & 2 cups water and bring to a boil and cook for 5 min. and add 1 tsp. coconut flavoring . Put 1 ½ pkg. coconut in a bowl and pour ½ sugar mixture over coconut to moisten it and cover put into refrigerator

After taking the cake out of the oven cool it on racks or plates covered with wax paper. When they are cool take a knife or string and split the layers apart and lay each layer on its back and spoon the left over sugar water over all the insides of the layers to make sure the cake is moist.
