1/2 cup shortening, (oil or margarine. I prefer vegetable oil as some olive oils can have an intrusive flavor)
1 cup sugar
2 eggs
2 mashed ripe bananas
1 & 1/4 cups plain flour
3/4 teaspoon soda
1/2 teaspoon salt.

Cream shortening, sugar and egg. Then add the rest. Put in a greased pan. Cook at 350 F or 175 C. My original recipe says 30 minutes for an 8 x 8 pan. With my current oven it takes an hour with a loaf pan. You just need to check after 30 minutes or so and assess how it is doing.
