4 carrots shredded,
1 apple shredded,
handful of raisins,
juice from one lemon,
3-4 T mayonnaise
nuts (optional - pine, walnuts and pistachio are best)

Directions:
Directions:
Soak raisins in boiling water to plump. Mix all ingredients and chill for one hour to allow flavors to meld. Stir prior to serving to mix all juices into salad again.
