1 cup oatmeal
1 cup flour
1/3 cup brown sugar
1/2 tsp baking soda
1/2 tsp salt
1 tsp baking powder
1 tsp vinegar plus milk to equal one cup liquid
(let stand 5 minutes) (or one cup buttermilk)
1 egg, beaten
1/3 cup oil

Combine the dry ingredients in a bowl. Combine the wet ingredients in another bowl. Mix together until moistened. Fill greased muffin cups 2/3 full. Bake at 400 degrees for 15-20 minutes. Makes 1 dozen.

Here is a recipe for oatmeal muffins that we probably had once a week when Gabriel's mom and her 3 sisters were growing up. I used to mix the dry ingredients the night before so the muffins could be made more quickly in the morning on a school day. A dozen was barely enough, but the girls would sometimes save one out for their lunch. The recipe came to me from the Los Gatos Parent Nursery School, where the children first enjoyed making and eating these treats. I hope your school families enjoy it.
