1 cup whole wheat pastry flour
1/4 cup powdered sugar
1/2 tsp. salt
1 cup milk
2 eggs

Directions:
Directions:
Mix together the flour, sugar, and salt (sift if you want to). Add the milk and eggs and beat until smooth. Pre-heat a crepe pan or 8" saute pan. Butter lightly before each pancake. Using about 3 spoonfuls of batter for each--enough to cover the bottom of the pan thinly--turn the pan so the pancake spreads out very thin. Or spread the pancake thinly with a flat instrument such as the bottom of a metal measuring cup. Turn once, then turn out on a plate and roll-em-up with powdered sugar, jams, or fruits inside.

These have become an everyday breakfast for Kate. They are very fast to prepare. I usually do a half recipe for her. For my own kids, these were a special treat usually for neighborhood brunches when we would fill them with fresh fruits and whipped cream. Yum!
