Pastry:
1 1/2 c. all purpose flour
1 tsp. salt
1/2 c. plus 1 tbsp. shortening
3-6 tbsp. ice water

Filling:
3/4 c. sugar
1/4 c. firmly packed brown sugar
3 tbsp. flour
2 tsp. cinnamon
1/8 tsp. nutmeg
6 c. peeled, thinly sliced apples
1/4 c. light corn syrup
2 tbsp. butter, cut up

Directions:
Pastry: Combine flour and salt in bowl. With pastry blender or fork, cut in shortening until mixture resembles coarse crumbs. Sprinkle on water l tbsp. at a time, tossing with fork until pastry holds together. Shape into 2 balls; flatten into disks. Set aside.

Filling: Combine sugars, flour and cinnamon and nutmeg in bowl. Add apples and corn syrup; toss. Set aside.

Preheat over to 425º F. On lightly floured surface with floured rolling pin, roll 1 pastry disc into 12 in. circle. Fit into 9 in. pie plate, leaving overhang. Spoon in filling; dot with butter. Brush overhand with water. Place remaining pastry disc on pie. Trim and flute edge. Brush pastry with milk and sprinkle with sugar. Bake pie for 20 minutes. Reduce oven to 350º F. and continue baking until golden brown.
