1 lb. small link sausages,
1 tbl. prepared mustard,
2 c. mashed sweet potatoes,
2 tbl. sausage fat,
1 tsp. salt,
1/8 tsp. pepper,
1 1/2 c. sliced apples,
2 tbl. lemon juice,
1/3 c. brown sugar,

Directions:
Cook sausages until only lightly browned, using low heat. Spread each with mustard. Whip cooked sweet potatoes with sausage fat and seasonings and spread over bottom and sides of buttered 1 qt. casserole. Add apples, sprinkle with lemon juice and sugar. Top with sausages. Bake at 350º for about 30 min. Sausage patties may be used if desired. If sausage browns to quickly, cover casserole during cooking.
