1/4 diced salt pork (or bacon),
1/2 c. chopped onion,
1/4 c. chopped parsley,
5 med. diced apples,
1/2 c. sugar,
2 c. soft bread cubes,

Directions:
Directions:
Cook salt pork in frying pan until crisp, remove from pan. Cook parsley and onion in the fat for a few minutes. Place apples in the pan, sprinkle with sugar. Cover and cook until tender, then continue cooking until apples are candied. Add salt pork and bread cubes; heat through. Makes 3 cups.

Pile hot stuffing between two sections of spareribs, skewer together and bake. Or use the stuffing in a boned shoulder of fresh pork. One half of this recipe is enough to stuff four large pork chops, with enough to cook on top as well. Have your butcher cut your chops double thickness, and cut through the meaty portion enough to leave a pocket for the stuffing.
