4 eggs, beaten
3 cups thinly sliced zucchini
1 cup Bisquick or 1 cup flour & 1 tsp. baking powder
1/2 cup chopped onion
1 clove garlic, finely chopped
2 Tbsp. chopped fresh parsley or 1 Tbsp. dry parsley
1/2 tsp. salt and a dash of pepper
1/2 tsp. oregano
1/2 cup grated cheese
1/2 cup vegetable oil
1/2 cup cheddar cheese (chopped)

Mix all ingredients, except zucchini. Then fold zucchini in. If batter is too thick add a little water. Bake in greased 9x13 pan until golden brown. 35-40 minutes in a 375º oven.
