One 30 oz. can refried beans
1/3 cup Mexican beer, such as Corona
3 Tbsp. tequila
3-4 tsps. pureed canned chipotle chiles in adobo, to taste
2 cups shredded Monterey Jack cheese
3 scallions, trimmed and thinly sliced
Tortilla Chips, for serving

Directions:

In a medium pot, combine the beans, beer, tequila, and chipotle puree. Set over medium heat, partially cover, and cook, stirring often, until hot, about 7 minutes. Stir in about 1 1/2 cups of the cheese and about three quarters of the scallions and transfer to a heated serving bowl. Sprinkle with the remaining cheese and scallions and serve accompanied by chips.
