Walnut Dressing:
2/3 cup walnut oil
1/3 cup lemon juice
1/2 tsp.Dijon mustard
3/4 tsp. sugar
salt and pepper to taste

Salad:
4 heads Boston lettuce, torn
1 cup toasted walnuts, coarsely chopped
2 ounces blue cheese, crumbled (1l2 cup)
1 pear, peeled, cored, and thinly sliced

Directions:
Directions:
Add dressing ingredients to a covered jar, shake well and refrigerate. (can be made up to 4 days in advance).
Toss salad ingredients in salad bowl. Add dressing, toss again and serve immediately.

Walnut oil should be stored in the refrigerator as it becomes rancid quickly

I toast walnuts in the microwave - just be sure to watch them so they don't burn
