2 large sweet onions
8 pieces bacon, sliced in half
1/2 tsp salt
1/2 tsp ground black pepper
1/2 tsp garlic
2 Tbsp butter

Slice off top of onion and make sure to leave root side in tact. Peel outer layer of onion down to root side.

Cut a cross into the onion about 2/3 of the way down, dividing it into 1/4 sections on top. This should leave the bottom 1/3 of the onion together and will hold the whole onion together. Then cut another cross midway through the other cross cut. This divides the top of the onion into 1/8 sections.

Divide spices equally between the two onions, add the butter in the middle of each onion. Then add in the bacon halves in between each onion wedge.

Wrap in heavy duty foil and bake for about 40 minutes, turning twice.

Serves 8, 1/4 of the onion and one piece of bacon total per person.
