Ingredients: Filling:
¾ to 1 lb. pitted dates (cut up into pieces) ½ c. sugar ½ c. water
Dough:
1 c. brown sugar 1 c. white sugar 1 c. shortening 3 eggs 1 tsp. baking soda pinch of salt ½ tsp. cinnamon 4 c. flour
Additional:
1 c. walnuts, chopped

Combine filling ingredients and bring to boil. Lower heat and simmer until thick. Cool. Dough:
Cream together the sugars and shortening. Add the eggs. Add the dry ingredients and beat until combined. .
Divide the dough into thirds. One section at a time, roll into approximately 12” x 8”. Put 1/3 of the filling down the center leaving 1 to 1 ½ inches on either side.* Top with 1/3 cup chopped walnuts. Roll up jelly-roll style (long side to long side). Transfer to cookie sheet. Cover and chill several hours or overnight.
*If the date filling is too thick to spread easily, add a little water until it is of spreading consistency.
Slice with sharp knife into approximately ¼” slices and bake at 375º for 10-12 minutes (until light brown). |
