3 cups Baking Mix
1/2 cup sugar
1/3 cup powdered milk
1 egg (or 4 tsp powdered egg plus 1/4 cup of water)
1 cup water

Directions:
Find the Baking Mix and Powdered Eggs (if desired) recipes under Chuck Box - Side Dishes.

Mix dry ingredients. Mix in egg or powdered egg and water only until ingredients are moist. Batter will be lumpy; do NOT overmix or muffins will be full of air holes and tough in consistency.

Add 1/2 cup dried fruit and spices (such as cinnamon) or 1/2 cup shredded cheese (and 1/4 cup bacon bits if desired) to muffin batter when mixing for a variety of flavors

Use the Bakepacker (4 quart size) method of cooking in steam for fourteen minutes or until done in middle.
