2 onions, chopped
2-3 cloves garlic, minced
1/2 cup oil
2 medium eggplants, sliced in strips
6-8 Zucchini, sliced
4 tomatoes, peeled and chopped
2 green peppers, chopped
2 tsp. salt
1/2 tsp. dried thyme
black pepper to taste
2 leaves fresh basil, chopped

Directions:
Directions:
Saute onions and garlic cloves in 1/4 cup oil until soft in Dutch oven. Add eggplant, and zucchini with remaining oil and cook 5 minutes, stirring frequently. Add tomatoes, peppers, salt, thyme, pepper and basil to pot. Cover, and simmer over low heat 1 hour. Stir often.

Leave on the purple eggplant skin for a little more color. Excellent for filling you up without a ton of calories.
