Beets for 12 pints
5 c. Sugar
5 c. Vinegar
5 c. Water
2 Sticks Cinnamon
1 tsp. Whole Cloves

Directions:
Directions:
Cook beets until done. In a large sauce pot, place sugar, vinegar and water. Add cinnamon and cloves (may put in a spice bag) and bring syrup to a boil. Add beets, bring to a boil and can in hot, clean, sterilized jars.

You may also use purchased canned beets, if you don't grow them. I don't water bath these as the vinegar provides enough acid for the preservation. My Arizona neighbors beg for me to bring them Beet Pickles in the winter!
