10 c. Water
4 1/2 c. Sugar
1 c. Cornstarch
2 tsp. Cinnamon
1/2 tsp. Nutmeg
1 tsp. Salt
5 1/2 lb. Apples, peeled, cored and sliced
3 T. Lemon Juice

Directions:
Directions:
In large saucepan, blend sugar, cornstarch, cinnamon, nutmeg and salt. Stir in 10 c. water. Stir and bring to boil and let thicken. Add lemon juice. Remove from heat. Fill hot jars with apples; add thickened syrup to the jar. Add lids and process in hot water bath for 20 minutes. Makes 7 quarts.

This works great for apple pies, coffee cakes, etc. It is like commercial canned pie filling, only better. Using a frozen single crust, a quart of this filling and a crumb topping, you have a quickly made pie!
