2 can tomato pieces or diced tomatoes, undrained
1 can red (kidney) beans, undrained
1 can white (Northern) beans,undrained
1 lb bacon
6 to 8 garlic cloves
Dried red pepper to taste
2 to 3 large carrots, peeled and sliced into coins
1 lb spaghetti

Directions:

Cut bacon in half-inch pieces. Fry crisp and drain. In large pasta pot, saute crushed garlic in olive oil with red pepper. Add tomatoes, beans, cooked bacon and carrot slices. Add more red pepper to taste. Simmer one hour or more. Next break up pasta in half and stir it into the pot along with several cans of water. After it starts to boil, turn down the heat to simmer. Stir from time to time. Serve up when the pasta is cooked, al dente. (Serves about six)

Serve with tossed salad, garlic bread and red wine. Buon appetito.
