6 large Rome apples,
1/4 c. raisins,
1/4 c. brown sugar,
1 tsp. cinnamon,
grated rind of 1 lemon,
1 c. sugar,
1/2 c. boiling water,
1 tbl. butter,

Directions:
Directions:
Wash and core apples, pare down 1/3 way from stem. Place in shallow baking dish.
Combine raisins, brown sugar, cinnamon, lemon rind in a small bowl. Spoon into the centers of the apples.
Dissolve sugar in boiling water stir in butter and pour over apples.

Bake uncovered in 350º oven, basting often with the syrup, for 40 to 60 min.

Remove from the oven and continue basting as they cool to form a thick glaze.

Be careful not to break the skin on the bottom when coring.

Can be frozen. When desired for eating, place in a pan, in a 250 degree oven. Heat just long enough to thaw and warm them through. Serve with whipped cream or plain
