1/2 c. sugar,
1 c. apple juice,
2 egg yolks,
2 tbl. butter,
1/4 c. cornstarch,
1/8 tsp. salt,
1 tbl. grated lemon peel,
1 tsp. lemon juice,
Directions:
Directions:
Combine sugar, cornstarch, and salt. Mix with hot apple juice and cook in a double boiler until thick. Cover and slowly cook for 10 min., stirring occasionally. Stir a small amount of the thickened apple juice into the beaten egg yolks. Return to the double boiler and stir in well. Add butter and stir until melted. Stir in lemon peel and juice. Cool. Spread between layers of cooled cake.
