2 apples (Granny Smith is a good variety to use)
3 cups complete pancake mix (one that only needs water added)
1 cup quick cooking oats (not instant)
1 tsp ground cinnamon
3 cups water

Directions:
Peel and chop apple.

Mix pancake mix, oats, and cinnamon. Add water and chopped apples. Stir just until large lumps are gone. Do not overmix, batter will be lumpy. If you mix too much, pancakes will not be as fluffy or tender.

Heat a nonstick griddle and frying pan to the point where a drop of water sizzles and then disappears.

Add about 1/2 tsp of vegetable oil to pan then add 1/3 cup of pancake batter.

Cook until bubbles begin to appear in the pancake and the sides look cooked. Then turn and cook another minute or until done.
