5 generous cups riced potatoes (room temp. or colder.
1 tsp. sugar
1 tsp. salt
6 T. shortening (half butter)
1 cup flour or less]

Directions:
Cook potatoes in salted water, drain well, and rice while hot. Let stand overnight, then add other ingredients. Knead 10-15 times. Work flour into cloth covered board. Work flour into rolling pin. Roll thin. Fry 30 seconds on each side on a hot griddle or lefse grill.
