ground beef
onion
corn chips
egg
chili powder
salt
extra-virgin olive oil
chopped tomatoes
can of black beans
sandwich sub rolls or hot dog buns
shredded pepper jack cheese

Directions:
Directions:
Combine beef, chopped onion, crushed corn chips, 1 egg, chili powder, salt and water, then form into meatballs. I saute sliced onion in olive oil, then add tomatoes and more corn chips. I then add the meatballs, cover and simmer until cooked through,, about 20 minutes. I spoon the meatballs into toasted rolls with cheese and broil until melted, something like 2 minutes
