2 c. cooked corn
1 diced avocado
1 pint halved cherry tomatoes
1/2 c. finely diced red onion
2 T. olive oil
1 T. lime juice
1/2 tsp. lime zest
1/4 c. chopped fresh cilantro
1/4 tsp. salt
1/8 tsp. pepper

Directions:
Directions:
Place corn in a large bowl. Add avocado, tomatoes and onion. In a separate bowl whisk together oil, lime juice, lime zest, cilantro, salt, and pepper. Stir dressing into salad and serve.
