2 large chicken thighs
100 g (3.5 oz) young ginger roots, skinned and slice thickly
4 pineapple rings from a can, quarter
1 capsicum, deseed and slice thickly
1 red chili, deseed and slice thickly
1 tsp choped garlic
1 tsp sliced shallots
1 tbsp oil
1/2 tsp dark soya sauce (optional)

Marinade for Chicken
1/2 tsp salt
1/2 tsp sugar
1/2 tsp light soya sauce
1/2 tbsp cornflour
1 tbsp oil

Sauce Ingredients
1/2 tsp salt
1/2 sugar
1 tbsp cornflour
4 tbsp pineapple syrup

Directions:
Directions:
1. Wash, debone chicken thighs and cut into bite-sized pieces. Marinade for 10 minutes.
2. Heat oil in a wok or skillet. Fry garlic and shallots until fragrant. Include ginger slices.
3. Add marinated chicken and fry for 5 minutes. Lower heat slightly if meat threatens to burn.
4. Add green pepper, chilli and pineapples. Fry for another 3 minutes.
5. Add sauce ingredients and stir briskly for a further minute. Darken the sauce with a few drops of dark soya sauce (optional). Serve immediately.
