10 lbs. tomatoes chunked with some juice squeezed out
2-3 lbs. large onions diced
2-3 large bell peppers diced
1-2 bunches green onion sliced
7 jalapeņo peppers; remove seeds from half
2 tsp. garlic powder
2 T. pickling salt
1/4 c. sugar
1/2 c. vinegar
course black pepper
2-12 oz. cans tomato paste

Directions:

Combine all ingredients in large stock pot. Bring to boil then simmer for 30 minutes. Pour into canning jars and process in water bath or freeze in containers.

My mom and I make this salsa every summer from fresh vegetables straight out of her garden. This recipe is a medium salsa. Just add more jalapeņo pepper seeds to make it hot.
