1 can (15 oz. or 16 oz.) Pink Salmon
1 egg
1/3 c. minced onion
1/4 c. minced bell pepper
1/2 c. flour
1 1/2 tsp. baking powder

Directions:
Directions:
Drain salmon, saving 2 tbsp. of the liquid in a small bowl. In a medium mixing bowl, mix salmon, egg, onion and bell pepper until combined. Stir in flour. Stir baking powder into salmon liquid and then stir it into the salmon mixture. Form into about five patties, flattening slightly. Fry in a skillet in a small amount of hot vegetable oil until golden brown (about 5 minutes). Place on paper towels to drain.
