1 cup water or milk
3/4 cup sugar
1/4 tsp. salt
5 tablespoons cornstarch
1/2 cup cold water
2 well beaten egg yolks
1 tablespoon butter
6 tablespoons lemon juice

Pastry shell-baked

Directions:
Directions:
Bring water or milk, sugar, salt to a boil over direct heat. Add cornstarch blended with 1/2 cup cold water. Cook over low heat until thickened. (about 5 minutes)

Remove from heat and add separately, mixing well after each addition:
1st: egg yolks
2nd: Butter
3rd: lemon juice

Pour into baked pastry shell and chill to set.
