1 lb (give or take) chicken breast (2) or 1 pkg of chicken strips
olive oil for frying chicken
1 can black beans (drained)
1 can mexi-corn (drained)
1 jar salsa or picante (medium size)
1 C rice (1 boil-in-bag will work also)
Parmesan cheese
Monterey Jack Cheese (with jalapeņos optional) shredded

Directions:
Directions:
Cook rice.

Fry chicken in olive oil until chicken is done.
Add black beans, mexi-corn, and salsa.
Simmer for 10-15 min.

Serve over Rice.
Top with Parmesan and Monterey Jack Cheese.
