1/4 c. rice wine vinegar
2 cloves garlic, minced
1 T. Dijon mustard
1/2 tsp. salt
1/4 tsp. sugar
1/4 tsp. ground pepper
1/3 c. vegetable oil
4 c. cooked wild rice (cooked in chicken broth)
11/2 c. chopped cooked chicken
1/2 c. diced red bell pepper
1/2 c. fresh snow pea pods, trimmed, cut in 1 in. pieces
3 green onions, chopped
2 T. lemon juice
1 or 2 avocados
1 c. pecan halves, toasted
Lettuce leaves

For dressing: place vinegar, garlic, mustard, salt, sugar and pepper in blender. Cover and process until thoroughly blended. With blender running, gradually add oil in a steady stream. Process 30 seconds or until thickened, Set aside.
In a large bowl, place wild rice, chicken, bell peppers, snow peas, green onion and lemon juice. Toss gently to mix. Pour dressing over all and toss gently. Cover and chill two to four hours.
Just before serving peel avocado, remove pit and dice flesh into 1 in. pieces. Add avocado pieces and pecans to salad and toss gently to mix. Serve salad over lettuce leaves.
