3/4 lb lean beef
1 tbsp Szechuan peppercorns
1/2 salt
1/2 tsp sugar
1 tsp cornstarch
1-1/2 Chinese rice wine or dry sherry
1-1/2 tsp dark soy sauce
2 tbsp peanut oil

Directions:
Directions:
Shred the beef. Crush peppercorns with the flat side or a cleaver and press them into the beef shreds. Let stand at least 1/2 hour. Mix in a bowl salt, sugar, cornstarch, rice wine or sherry, and soy sauce. Over high heat in peanut oil in a wok of fry pan, stir fry the beef for 2 minutes. Stir liquid mixture. Add liquid mixture and then stir fry for 2 minutes more over medium flame. Stir in 2 tbsp or more water if ingredients stick to pan. Serves 2-3..
