2 c watermelon
1 large cucumber, seeds discarded, peeled
1 small red pepper, diced, seeds removed
1 small yellow pepper, diced, seeds removed
2 fresh, ripe tomatoes, quartered or
2 c cherry tomatoes
1 seeded jalapeņo (or 1/2 to 1 tbsp favorite
hot sauce, to taste)
3 tbsp freshly picked mint
1/4 red onion, chopped
1-1/2 tbsp red wine vinegar
4 tbsp EVOO
kosher salt and freshly ground pepper to taste

Add all ingredients to a blender and blend. Season to taste with salt and pepper. Serve cold.
