2 cups sugar
16 Tablespoons unsifted cake flour
4 cups milk
2 teaspoons salt
4 squares (1 ounce each) chocolate
4 Tablespoons butter
24 large marshmallows
2 pints whipping cream
Mint chocolate
Fifty 3 inch tart shells

Sift sugar, flour, and salt. Add milk slowly, and cook over very slow heat, preferably in a double boiler until thick, stirring quite often. Melt chocolate and butter together, and add to mixture. Cut marshmallows and add to mixture, and beat until smooth and creamy. Cool and spoon into cooked tart shells. Whip cream and lightly sweeten. Spread over tarts and shave mint chocolate over top of whipped cream for a pretty effect.
