2 c. minus 2 T. cake flour
1 2/3 c. bread flour
1 1/4 tsp. baking soda
1 1/2 tsp. baking powder
1 1/2 tsp. coarse salt
2 1/2 sticks unsalted butter
1 1/4 c. light brown sugar
1 c. plus 2 T. granulated sugar
2 lg. eggs
2 tsp. vanilla extract
1 1/4 lb. Bittersweet Chocolate disks or feves (at least 60% cacao content)

Sift flours, baking soda, baking powder and salt in a med.-sized bowl. Set aside. Using a mixer, cream butter and sugars together until very light (fluffy) or about 5 min. Then add eggs, one at a time, until well mixed. Stir in vanilla. Reduce mixer speed to low. Add dry ingredients in small portions at a time to mix, until just combined, or about every 5 to 10 seconds. Drop chocolate pieces into dough and mix without breaking the chips. Press plastic wrap against the dough and refrigerate for 24 hr. When ready to bake, preheat oven to 350º. Line cookie sheet with parchment paper. Using a measuring cup, scoop dough into 1/4 c. mounds onto cookie sheet. Flip over any chocolate pieces that are facing down. (This helps make them look extra yummy.) Sprinkle sea salt lightly on cookie. These cookies will be large after baking. Bake for 15 - 18 min. or until golden brown. Transfer sheet to a wire rack for 10 min., then move cookies to another rack to cool. Repeat with remaining dough, or refrigerate up to a day.

I am not the greatest cook, but my husband found a few recipes for me to try out. This was one of them. He makes sure he brags on me whenever I make these. I sure know the way to my hubby's heart with some sweet treats like this. It doesn't hurt that others request them too. Be prepared to make lots since the batch only makes 18 big, yummy cookies.
