1 ripe mango peeled, pitted and diced into small chunks
½ cup sugar
½ cup unsweetened applesauce
¾ cup butter
2 eggs
1 tsp. vanilla
2 tsp. cinnamon
½ tsp. salt
2 cups of white flour
2 tsp. baking soda
¼ cup of chopped walnuts
½ cup shredded coconut

Directions:
Directions:
In a large bowl mix flour, salt, baking soda and cinnamon and set aside.

Mix together butter, vanilla, sugar, applesauce and eggs until well blended. Add in chopped mango and blend well. Add in the walnuts and coconut until blended. Gradually add to the dry mixture until well blended. Bake in a greased standard size loaf pan or in two small loaf pans. Bake in preheated 350 degree oven for approximately one hour. (Baking time may be slightly less if you are using the small loaf pans.) Bread is done when you can insert a knife into the middle and have it come out clean.

This bread is delicious when served slightly warm but is just as good when completely cooled. It does freeze well also.
