1/2 pound medium hot sausage 3/4 pound chicken livers 1 cup finely chopped onion 2 cups mushrooms, chopped 1/2 cup butter 1 1/2 teaspoons dry mustard 1/2 teaspoon ground nutmeg 1/4 teaspoon ground cloves 1/2 teaspoon garlic salt 1/2 teaspoon seasoned salt coarsely ground pepper dash of cayenne pepper 3 eggs, hard cooked and chopped 1/2 pound bleu cheese 1/3 cup cognac
Sauté sausage chicken livers, onion and mushrooms until tender. Cook until juices are reduced by half. Add remaining ingredients and stir to mix well. Blend mixture in a food processor. Chill in a large bowl or oblong container for flavors to blend. Can be frozen at this point in separate serving portions. Serve with party rye or unsalted rice wafers.
