1/2 c. flour
1/2 c. coconut
1/2 c. butter (melted)
1/2 c. white sugar
30 unsalted, crushed soda crackers

Filling:-
1 19 oz.can crushed pineapple
1/2 c. white sugar
1/2 tsp. vanilla
2 tbsp. cornstarch
2 egg yolks
1 tbsp. butter

Meringue:
2 egg whites
1/4 c. white sugar

Directions:
Directions:
Mix the first 5 ingredients together and press into a 8" x 9" pan. Save 1/2 cup to sprinkle on top of the meringue.

Filling: - Mix the 6 filling ingredients together and
boil to thicken. Pour over the crust.

Meringue:- Beat the 2 egg whites until soft peaks form. Gradually beat in 1/4 cup of white sugar until stiff peaks form.

Spread the meringue over the filling and sprinkle the 1/2 cup of cracker crumbs over the meringue.

Bake - at 325 for 30 minutes
