1 lb. hamburger
1 large onion, chopped (or substitute dry onion)
1 can tomato soup
1 can enchilada sauce (or substitute 8 oz. tomato sauce and one packet enchilada seasoning)
1 large can pork and beans
1 small can chopped green chilies
corn chips
Desired toppings (grated cheese, sour cream, chopped lettuce, chopped tomatoes, sliced black olives, sliced green onion, diced avocado or guacamole, picante sauce)

Brown hamburger with onion; drain. Add soup, sauce, seasoning, pork and beans, and chilies. Simmer 10 min. Spoon over corn chips. Top as desired.

Adapted from a recipe by Helen Lowe, this is Robert's favorite meal. It is also a great missionary feed or quick (everyone is starving) Fast Sunday meal. It can easily be multiplied to serve a crowd. You can also brown the meat and onion and combine them with all the other ingredients in the crock pot and heat until ready to serve (add a little water to thin if necessary).
