8 to 10 cubed, cooked potatoes
3/4 cup bacon, dried
1 cup chopped celery
1 cup chopped onion
3 tablespoons flour
1 1/3 cups water
2/3 cup cider vinegar
2/3 cup sugar
3 teaspoons salt
1/8 teaspoon pepper

Directions:
Directions:
Cook bacon in skillet, drain fat, reserving 1/4 cup. Put 1/4 cup drippings back into skillet. Add celery and onions, cook 2 to 3 minutes. Blend in flour. Stir in the water and vinegar, cook, stirring constantly until thick and bubbly. Stir in sugar, salt and pepper. Pour mixture over potatoes and bacon in a greased casserole dish (approx. 2 quarts). Mix lightly and cover and bake in a 350º oven for 30-40 mins.
